Start by making the citrus salad. Peel and dice the orange, mandarin and grapefruit then combine in a bowl. And the lemon juice and two sprigs of chopped thyme and stir.
Add 100g Puhoi Valley Citrus Yuzu Yoghurt to each plate, then add a spoonful of the citrus salad and top with two meringues.
Garnish with a sprig of thyme and serve!
