Puhoi Valley Authentic Greek Rhubarb & Strawberry Compote Fool


Ingredients

  • 400g tub Puhoi Valley Authentic Greek Rhubarb & Strawberry Compote
  • 2 Rhubarb Stalks
  • 2 Tbsp Sugar
  • 2 Tbsp Water
  • Meringues
  • Fresh Strawberries

Method

  1. Cut rhubarb stalks into 5cm lengths, scatter with a couple of tablespoons each of sugar and water.

  2. Roast in a moderate oven until just tender. Cool and set aside.

  3. Combine in bowls or glasses with crushed meringues, fresh strawberries, and Puhoi Valley Authentic Greek Rhubarb & Strawberry Compote. Serve immediately.
