Place oats in a bowl and cover with cold water. Cover bowl, place in the refrigerator and leave to sit overnight.
Remove from the refrigerator and place soaked oats in a heavy-based saucepan with the Puhoi Valley milk and salt. Place on the heat and bring up to the boil, then reduce heat and simmer for 7 minutes until creamy.
Serve topped with chopped mixed dried fruit and sprinkled with ground nutmeg or cinnamon. Pour over extra Puhoi Valley Half & Half if needed.
