Remove the Puhoi Valley Double Cream Brie from the packaging and bake on a lined baking tray for 12-15 minutes at 180°C. Keep an eye on the oven to ensure the cheese doesn't burst open.
While the cheese is baking, combine the dried apricots, dried figs, walnuts and honey to create your cheese topping.
Remove your cheese from the oven, place on your serving tray and top with your fruit & nut topping and a sprinkle of fresh rosemary. Serve with toasted sourdough.
