Preheat the oven to 180°.
Add rinsed cherry tomatoes to a baking tray. Coat with balsamic vinegar, olive oil, salt and pepper then bake for 20 minutes until well roasted.
Add all the whipped feta ingredients to a food processor and blend for 2 minutes until smooth and creamy.
Spread the whipped feta over a serving plate, top with the roasted tomatoes and fresh basil leaves. Serve with bread.
