Creamy Whipped Feta with Roast Balsamic Tomatoes

Ingredients

  • 1 block Puhoi Valley Cow's Milk Feta
  • 3 Tbsp Puhoi Valley Authentic Greek Yoghurt
  • ¼ Cup Olive Oil
  • ½ a Lemon, juiced
  • ½ tsp Paprika
  • 2 punnets cherry tomatoes, mixed colours
  • ½ cup Balsamic Vinegar
  • 2 Tbsp Olive Oil
  • Salt & Pepper, to taste
  • Ciabatta, or Sourdough, to serve
  • Fresh basil leaves, to garnish

Method

  1. Preheat the oven to 180°.

  2. Add rinsed cherry tomatoes to a baking tray. Coat with balsamic vinegar, olive oil, salt and pepper then bake for 20 minutes until well roasted. 

  3. Add all the whipped feta ingredients to a food processor and blend for 2 minutes until smooth and creamy.

  4. Spread the whipped feta over a serving plate, top with the roasted tomatoes and fresh basil leaves. Serve with bread.
